In Philosophy:
Thomas Aquinas (AD 1200s) believed that both reason and Christian teaching came from God. Therefore, both reason and faith were the same teaching.

In Literature:

Boethius - AD 500s (Italy)

Beowulf - c. AD 700s (England)

Geoffrey Chaucer - AD 1300s (England)

Giovanni Boccaccio - AD 1300s (Italy)

Dante Alighieri - AD 1300s (Italy)

Various Nore and Icelandic Sagas - Early Middle Ages

Sir Thomas Malory - AD 1400s (England)

The Nibelungenlied - AD 1100s (Germany)

Anselm of Canterbury - AD 1000s (Italy/England)

The Song of Roland - AD 1100s (France)

In Architecture:

The great Cathedrals of Europe are testament to the skills of the medieval Europeans as builders.  The same is true of many of the castles and other buildings constructed during this period.  The Norman buttress and later the flying buttress were invented allowing for taller and taller buildings.

Salisbury Cathedral, completed in AD 1258 stands 404 feet high.

Discovery:

The "Voyage of St Brendan the Navigator" written in the 9th century describes the voyage of St. Brendan to the "Isle of the Blessed" in the AD 500s.  This island is thought by many to have been Newfoundland.

In AD 985 Eric the Red discovered Greenland.

In AD 1000 Lief Ericson discovered America.

Inventions:

blast furnace

directional compass

the button

adding hops to beer

the horse collar

the hourglass

glass mirrors

movable type printing (perhaps the most important invention in all history)

the rolling mill

watermarked paper

the windmill

you have to read 'pillars of the earth', about the building of a cathedral. excellent book!
