Several months ago I posted a thread about how to cook Venison, Duck and Elk, asking for all kinds of good wild cooking recipes. I think with hunting season here, it would be fun to bring some good WILD GAME RECIPES to the table again. Care to share your favorites!

Duck Ka-Bobs 4- medium size duck breast fillets Italian or Old Dutch salad dressing......If you choose Italian, I think that Good Seasons - mix in the bottle is best. 1-Green pepper 1-medium onion Mushrooms Bacon Cut fillets into 11/2-inch cubes. Place meat in salad dressing so that the meat is covered. Cut green peppers and onions to fit skewer. remove meat from marinade. As you place meat on skewers, wrap meat in pieces of bacon. Alternate with peppers, onion, and mushrooms. Grill ka-bobs until done. Makes 3-4 ka-bobs. Venison Nuggets SUPPLIES NEEDED: Venison backstrap, steak seasoning, salt, pepper, flour, cooking oil. Tenderize backstrap with a fork or tenderizing utensil. Cube the backstrap into thick 2 inch cubes. Place flour in a mixing bag with the steak seasoning, salt, and pepper. Put the cubes into the bag, shake it until the flour mixture covers the meat. Using cooking oil (enough to line the bottom of a skillet), cook the cubes until they are a golden brown. These little nuggets are a great snack while hunting or fishing. Or...for lunch or dinner, serve with vegetables! Takes about 30 minutes. NOTE: You can use venison like any other red meat. Just make sure you tenderize the heck out of it.
