When we were at lunch at Kim's yesterday, her mom made this.  I had not had it in years, my mom made it all the time.  It is a great make ahead salad.

 


7 Layer Salad



1 small head iceberg lettuce, broken into bits (some folks use spinach)


1 cup dieced celery


4 hard boiled eggs, sliced


1 10 oz package frozen peas-- DO NOT THAW


1/2 cup diced green pepper


1 medium onion, diced



8 slices crisply fried bacon



6 oz grated cheddar cheese



 



Dressing:



1 1/2 cup mayonaise or salad dressing (like Miracle Whip)



2 tablespoons cider vinegar



2 tablespoons sugar (or sugar substitute)



Layer veggies, eggs and bacon in order given.  Spread dressing over top, sprinkle with the grated cheese.



Refrigerate about 8 hours before serving. Lasts several days (of course, it never has in our house.)
