Cranberry Jelly Candy From America
    1 can jellied cranberry sauce
    3 packages cherry, raspberry or orange flavored gelatin
    1 cup sugar
    1/2 bottle liquid fruit pectin
    1 cup chopped nuts
    additional sugar

    1. Place cranberry sauce in a saucepan; beat until smooth. Bring to a boil over medium heat.
    2. Stir in gelatin and sugar; simmer 10 minutes, stirring frequently until gelatin is dissolved. Remove from heat.
    3. Stir in fruit pectin. Add nuts and stir 10 minutes to keep nuts from floating. Pour into buttered square pan.
    4. Chill until firm, about 2 hours.
    5. Sprinkle sugar or flaked coconut on a sheet of waxed paper. Turn candy out onto paper; cut into squares with spatula dipped in warm water.
    6. Roll each square in sugar. After about an hour, roll in sugar again to prevent stickiness.

Cranberry Sauce From America
    1-1/2 Cup sugar
    1 navel orange
    1/2 teaspoon grated ginger
    4 Cups cranberries
    1/2 Cup toasted pecans

    1. Grate the orange peel and add to a pot with the sugar and ginger. Add the juice from the orange into the pot and simmer over a medium heat until the sugar is dissolved.
    2. Add cranberries and cook until they pop - about 5 minutes.
    3. Add pecans and cool sauce.

Well..there are cranberries IN this one.



Apple Cider Punch From America
    2 quarts apple cider
    4 cups cranberry juice
    2 cups orange juice
    2 cans apricot nectar
    2 cups sugar
    4 sticks cinnamon
    Orange slices studded with whole cloves

    1. In a large kettle, combine all ingredients except orange slices.
    2. Simmer for 15 to 20 minutes.
    3. Garnish punch with floating clove-studded orange slices. Serve hot.

SEA BREEZE
 

INGREDIENTS:

3 ounces Ocean Spray® Cranberry Juice Cocktail, chilled
3 ounces Ocean Spray® 100% White Grapefruit Juice
1 1/2 ounces Absolut® Vodka

DIRECTIONS:

Pour all ingredients into a tall glass filled with ice.

Makes 1 serving.

FRESH CRANBERRY ORANGE RELISH
 



INGREDIENTS:

1 unpeeled orange, cut into eighths and seeded
1 12-ounce package Ocean Spray® Fresh or Frozen Cranberries, rinsed and drained
3/4-1 cup sugar

DIRECTIONS:

Place half the cranberries and half the orange slices in food processor container. Process until mixture is evenly chopped. Transfer to a bowl. Repeat with remaining cranberries and orange slices. Stir in sugar. Store in refrigerator or freezer.

Makes about 3 cups.

NOTE: May also be prepared in a food grinder.

Cranberry Granita


serves 6-8


1 cup fresh Cranberries


1 navel orange, peeled, cut into chunks


1 cup sugar


1 can frozen orange juice concentrate


orange zest (optional)


mint leaves (optional)


Place all ingredients except orange zest and mint leaves into food processor, process until smooth.


Pour into 8"x8" square glass pan, put into freezer.


Every 30 minutes, scrape with fork, mixing any frozen bits into remaining liquid. Continue until entire pan is frozen.


Scoop and serve in fancy glasses, garnished with a few strips of orange zest and mint leaves.
