I am not sure about the "butter crackers" in the recipe...maybe something like Ritz?

Bacon & Cheddar Meatloaf


1/2 lbs. ground beef
1/2 lb. ground pork
1 tsp. salt
1 green pepper chopped
1 onion chopped
17 butter crackers
1 egg
6 slices of cooked bacon crumbled
1/2 cup shredded cheddar cheese

Put butter crackers in sandwhich bag and crush with a rolling pin until fine crumbs. Beat egg. Add all ingredients above together in a bowl and knead and mix together thoroughly. Mold and put into a greased loaf pan with sides of loaf not touching pan.

1/2 cup catsup
1/2 cup brown sugar
1 teaspoon mustard
1 cup hot water

Mix above ingredients together and pour over meatloaf. Liquid should almost cover the meatloaf. Bake at 350 degrees for 1 1/2 hours.
