Believe it or not, apples give off nitrogen gas which keeps  
potatoes from from budding. So when storing your potatoes,  
place an apple in the bag. Just don't forget about the apple!

Pretty cool. :) Hopefully you get to eating the potatoes before the apple goes bad. Although, you could just sacrifice another apple for the cause.
