I don't think it is from a lack of education about eating right, as it is being lazy. I don't just mean being lazy about excercise, but lazy about preparing meals. I think most of the obesity comes from to much fast foods and convenience foods that don't take much preparation. You, know, like freezer dinners.

Myself, I do eat a lot, and a lot of it could be considered unhealthy. I love to eat hawg jowl, and salt pork, and pork chops, and fried chicken. I prefer to cook it in lard when I can, but, I also eat a lot of beans and rice, and fresh greens when I can get them, i.e., mustard, kale, collards, turnip, spinach, and poke when it's in season. I do eat fresh vegetables, but hardly any fruit.

As for eating at night, I have what I call a prebedtime bedtime snack, and a bedtime snack. The first snack usually consist of a big plateful of whatever was left from supper, about a couple of hours after supper. Then, about an hour before I go to bed, I have a snack of whatever I can find. It might be a large hamburger with all the trimmings, or a couple of peanut butter and jelly sandwhiches. It could be a couple of dozen oreos, or just whatever there is, sometimes another plate full of leftovers.

The bottom line is, most southerners I know love to eat, and one of our favorite foods is anything fried. It's just part of our heritage. But as I said, we also love our greens and squash, and our okra(fried of course). I might die of a heart attack at some point, but right now at nearly 60, my blood pressure is 115/65, with a heart rate of around 65-70, and cholesterol around 145. I'm about 5'9" at 174 pounds, so it must not be affecting me too bad.

One thing I failed to mention is that I don't eat a lot of fast foods. Maybe twice a week, I'll have lunch at McDonalds, but I only have a couple of double cheeseburgers and a large order of fries, and sometimes maybe 4 tacos from Taco Bell.

No idea what's happened with the Aussies, Frankie. Is there a correlation in both countries with socioeconomic circumstances and obesity? Very cautiously, I think there could be here. The better off a person is, the more likely they seem to be to take better care of themselves... exercise, diet, medical checkups etc. But this is just a casual observation.

lard is the best frying agent there is, old south and traditional. (peanut oil is excellent as well). lard makes THE FLAKIEST pie crust on earth. CUT it into dough while cold. don't handle it more than necessary.

Mud, my Dad used to buy scrapple when he went to meat market...sorry, but i HATED that stuff! my Mom would fry it in slices, and we'd put maple syrup on it, but i STILL hated it! couldn't fool me about what that stuff was! ::chuckle::

I've heard of it, but never had it(scrapple). I've eaten a lot of souse meat(head cheese) though. I love hawg brains and eggs.::eats::

Lard is actually better for you than shortening or vegetable oils.

Have you never eaten fat back, or streak-o-lean? The one is almost pure fat, the other has just a tiny bit of meat on it. It's great for seasoning green beans, or just frying and eating.

Fat is one of my downfalls, and a lot of other southern people. No matter what type of meat I'm eating, I want the fat. When we have steak or porkchops, everyone cuts their fat off and gives it to me. When I cook a ham, and I'm carving it up, I will eat the fat as I cut it off. Not all of it, but a lot of it. That's where all the flavor is.

Perhaps people who take care of themselves well tend to be willing, or conditioned, to be more long-term focused.  Most people are too short-term focused.
