Garlicky coleslaw


Chef: Kate Lamont
Nibblies with Kate

This is one of the salads in chef Kate Lamont's fabulous Christmas menu with a difference.
Roast garlic and artichoke puree crostini with butter fried anchovies and Crisp fried banana prawns with cumin salt.
Marinated Bbq beef fillet and Rolled turkey breast with my Mother's stuffing.
Garlicky coleslaw and Pumpkin caramelized walnut salad.
Tempura strawberries with creme catalan.


Degree of difficulty: Low

You need:
2 cloves garlic, minced
1/2 cup olive oil
1 tbls white wine vinegar
zest and juice of 2 lemons
zest and juice of 1 orange
salt and pepper to season
half a green cabbage
1 small red onion
1 cup watercress

Method:
Mix garlic, olive oil, vinegar, zest and juice to make a dressing. Season. Slice cabbage and onion as finely as possible. Remove stalks from watercress. Mix cabbage, onion, and watercress with half the dressing.

Pineapple coleslaw




Ingredients (serves 8)


  • 1/4 red cabbage, shredded
  • 1/4 green cabbage, shredded
  • 2 carrots, peeled, coarsely grated
  • 1 red capsicum, deseeded, thinly sliced
  • 3 green onions, thinly sliced
  • 440g can crushed pineapple in natural juice, drained
  • 1 cup whole-egg mayonnaise
Method
  1. Combine cabbage, carrot, capsicum and green onion in a large bowl.
  2. Add pineapple and mayonnaise to coleslaw. Season with salt and pepper. Toss until vegetables are well coated in dressing. Serve.
Notes & tips
For a lower-kilojoule dressing, replace the mayonnaise with 1 cup thick, plain yoghurt combined with 2 tablespoons juice from the crushed pineapple.

Chicken coleslaw sandwiches


 





Makes
2 sandwiches


Ingredients
  • 1/2 cup finely shredded cabbage
  • 1 small carrot, grated
  • 1 green onion, thinly sliced
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • 4 baby cos lettuce leaves
  • 4 slices wholegrain bread, buttered
  • 60g shaved chicken
Method
  1. Combine cabbage, carrot and onion in a large bowl. Add mayonnaise, juice, and salt and pepper. Toss to combine.
  2. Arrange 2 lettuce leaves over 2 slices of bread. Top with chicken and coleslaw. Top each sandwich with another lettuce leaf, then remaining bread. Cut in half and wrap tightly in plastic wrap.
Notes & tips
Lunch box tip: Pack into lunch box with a berry ricotta muffin (see related recipe) and a cold drink.

These look good.  I will have to print them out for my recipe file.  I make cole slaw once in a while.
