5 ears of corn (do NOT use frozen with this recipe!)

1/2 cup red onion, diced fine

3 tbsp good olive oil (not some cheapo extra-virgin bland stuff, invest a few bucks in a GOOD bottle)

3 tbsp cider vinegar (balsamic would work too, but not white)

1/2 tsp kosher salt

1/2 tsp fresh-ground black pepper

1/4 - 1/2 cup fresh minced basil (again, do NOT use anything but fresh)

 

Boil the corn just long enough for it to lose its starchiness - 3-5 minutes.  Plunge into ice water to set the color and stop the cooking.  Leave in the water to cool.

While it's cooling, mix the onion, oil, vinegar, salt, and pepper with a whisk in a large bowl. 

When the corn is cool, cut it from the cobs (a very sharp knife helps with this).  Mix the corn with the oil and vinegar mixture.

Add the basil just before serving and toss.  Serve either cold or at room temperature.

 

 

 

Took this to Mom's July 4 cookout.  It was a hit!  :)

I made this today.  Yes, UTR was in the kitchen.  Luckily, the most difficult thing is boiling water.  Managed that ok, but it just didn't turn out as good as Erinna's did.  Dammit.  Only thing I changed was to use a little less basil than what is called for.  So, I have some halfway decent corn salad here, and a buttload of basil, if anyone wants to take the herbs off my hands.  :giantgrin:

I used Heinz cider vinegar. But I let mine sit overnight - I think that makes a big difference. I also invested about ten bucks in a good bottle of olive oil. Kosher salt, fresh-ground black pepper. When there are so few ingredients in something, each of them has to be really high-quality or it shows.

But speaking of balsamic, that sounds like it would be great. Hey, that reminds me of something...gotta go start a new thread.

I didn't let mine sit.  I will try that next time.  And you can have the rest of this basil if'n ya like.  I won't know if it's better the way I made it tomorrow, since I ate it all tonight.  I guess it wasn't that bad!
