Apparently, if you soak dried beans overnight before using them in your soups or other recipes, the chances of "toxic" emissions will be lessened. Who knew? I think we should form a focus group to test this theory.

We always soak our beans....not sure that alone reduces those pesky "toxic emissions" but I've heard adding a tsp of baking soda to the water is supposed to help with that. Then drain and use fresh water when cooking. or.... there's always 'Bean-o'.
