I haven't grilled a steak in two weeks and it feels like I've been punished or something.  I haven't used the grill - that's the problem.  I love to grill, anyone else?  I am defrosting some chicken now and will grill it tonight to satisfy my emotional needs.

I hear you, believe me, but we bought some real good chicken breasts a week or two ago and froze a bunch, and we already started the process for a chicken an rice pilaf dinner tonight.  When the wife is into something we go with the flow!

My favorite steaks to grill are thick juicy high-quality ribeyes.  90% of the time I want to have it with Peter Luger sauce (Peter Luger is a famous restaurant near me, they have two now actually, and they use their own private source of cows for meat, it gets green molded, they cut of the mold, it's some sort of special process), and they have this super good sauce.  They normally serve a side-dish of big super fresh red cut tomatoes with onions and the sauce on top of that too.

They hang the beef, and let it age slow, real tender stuff

A Texan's idea of steak is a whole roasted cow.  It's good, but it's just not the same.

My mother is from the Lower East Side (Mott and Pell), and my sister-in-law is from Dobb's Ferry.

Some really good clients are in Merrick.
