Steak Marinade

This sweet and salty combination of flavors--with a generous cup of bourbon---enhances the tenderness and flavor of steaks..like those served at the Yahtsmans Steakhouse


3/4 cup packed brown sugar

1 cup Jack Daniels Tennessee Whiskey

1 cup pineapple juice

2/3 cup soy sauce

4 cups water

1 Combine brown sugar and Jack Daniels in a bowl, stirring until sugar is dissolved.

2. Add Pineapple juice and stir.

3. Add soy sauce and stir, then add water.

4. Place steaks in a 9 inch by 13 inch baking pan, pour marinade over steaks and let sit in refrigerator for at least 24 hours.

5.  Grill steaks to desired degree of doneness.

 

NOTES: Marinate meat lor fish for only the reccomended amount of time.  Overmarinating will not enhance the flavor but can cause the meat or fish to "cook" without heat, and will dehydrate and toughen it.

Cook over indirect heatr.  The brown sugar and soy in the marinade will cause charring when cooked over direct heat.  Flip or turn the meat for at least 2 minutes after placing on the grill to reduce sticking and tearing.

Yield: Enough marinade for 12 steaks.

I did up a couple of ribeyes on Saturday.  Turned out pretty good, if I do say so myself.    Then I did a beef stir fry yesterday.  It is feast or famine with us...we do not eat red meat often, but when we do, we go to town.

Take some spicy brown mustard and spread it on both sides of the steak before grilloing and don't grill too fast.

If you can take the steak off the fire, put a little butter on it and it recovers from the burns then it is done to a turn.
